For example, in the Francis variety, the peel is greenish-golden, and in Alphonse, it varies from purple to yellow. We will determine ripeness by other signs:
- smell. The peel of ripe mango exudes a sweet fruity aroma. He is strong enough to recognize him, not particularly sniffing;
- elasticity. A ripe but not overripe mango should clench in a fist like a tennis ball - not much at all. Then it immediately takes its original form, leaving no dents. If there is a dent - the fruit is overripe;
- stalk. The area around the stalk should be rounded and slightly raised. If the tip of the peduncle is as if sunk into the peel, then the fruit must ripen.
If the fruit you have chosen has not yet ripened, you need to leave it at room temperature for a couple of days, and then check for ripeness again. Experts also advise putting mangoes in a paper bag - so it ripens faster.
How to quickly and correctly cut a bone
The mango bone is in the center. It is large, flat and located along the entire fruit. To quickly get rid of it, we will use a sharp knife of medium length:
- Cut a small piece of mango at the stalk.
Enough 1–1.5 cm
- Now turn the slice toward you. You will see a thin white strip. This is the bone.
We cut off the top to see the direction of the bone
- Cut the sides of the mango (they are called “cheeks”) parallel to the direction of the white strip. Cut about a centimeter from the bone.

Done! Now we have two large pieces of pulp (“cheeks”) and a cut out center, in which the inedible bone occupies most of it. They usually throw it away, but if you want to get a little extra pulp, you can also remove the bone from it:
- Put the cut piece flat on a cutting board.
- With the edge of the knife, find the border of the bone - it will not cut through, unlike the pulp.
- Circle the bone around the perimeter. It is usually oval in shape and occupies about 80–90% of the cut out center.

How to peel mangoes
Mango peel is edible and even healthy. However, her taste is quite specific, and it is difficult to chew on it. So you have to remove it - for this you can use an ordinary knife, glass, spoon or knife to peel fruits and vegetables.
Knife
If the mango is ripe and dense, you can not be smart and remove the peel with an ordinary small knife. Holding the fruit in one hand, cut off the skin, as when peeling potatoes. But be careful - the flesh of the mango is very slippery. You need to do this operation slowly, above the table.
Glass trick
To clean the resulting “cheeks” from the peel, you can use a glass with thin walls:
- Put a “cheek” on the edge of the glass so that the peel is outside and the flesh inside.
- Pick up the peel with the edge of the glass, separating it from the pulp.
Any glass cup with relatively sharp edges is suitable for this.
- Now, continuing to press the “cheek” to the glass, lead it down.
As a result, you get clean pulp in a glass. Separated peel will be in your hand.

Peeling knife
If you have a special knife for peeling vegetables and fruits, then you can peel them. It is more suitable for unripe fruits. The main advantage of such a device over an ordinary knife is that the peeler will not remove too much pulp. In addition, it is much more difficult for them to cut themselves. Therefore, if you are not skilled at peeling fruit with a knife, then a peeler can help you.
The downside is the thickness and density of the peel of the mango. You will have to carry out a peeler in the same place several times. A blade that is not sharp enough may not even pick up the peel.

There is a special knife designed for cleaning and chopping mangoes. It is very popular in Vietnam, where this fruit is eaten a lot and often. It looks like the usual peeler, but the distance between the blades is greater.

For this method we need “cheeks” with a peel and a regular knife:
- Cut the pulp in several rows along and then across to make cubes. Cut through the skin is not necessary.

Almost the same way you can cut mango and straws (slices). To do this, take a knife and “cheeks” with a peel:
- Make longitudinal cuts in the pulp of the thickness that you like in the slices. Cut through the skin is not necessary.
- Now twist the fruit by pressing on the peel.
- Cut the slices with a knife.
"Corn" (the fruit must be cleaned in advance)
If you have a special holder for corn (it looks like a fork), then you can attract it to slicing mangoes. The main difficulty in slicing is that the mango pulp is very slippery. With the help of such holders, we protect the hands and make the fruit more stable.
